From catch to IQF export

Antartic Seafood operates an HACCP-validated plant with MSC chain-of-custody certification (MSC-C-55732). Manual, detail-oriented processing from fresh raw material reception to IQF frozen packaging.

The production line is characterised by highly meticulous manual processes — starting with fresh raw material reception and concluding with IQF frozen product packaging. HACCP is validated under national standards and audited by sanitary and fisheries authorities plus certified external laboratories.

Extraction & catch

Fleet operations target sustainable extraction, protecting vulnerable biological stages. Validated under MSC fishery certification (MSC-F-31264). The fleet supplies fresh raw material to our processing plant with specialist fishing logistics.

Discharge & certification

Catch and discharge are controlled by SERNAPESCA and external auditors including MSC — ensuring regulatory compliance, resource sustainability and traceability from origin.

Certified catch transport preserves organoleptic and microbiological characteristics through protocols that maintain freshness during transit.

Reception & quality check

Raw material reception is a HACCP critical control point. Temperature, pH, origin certification and organoleptic characteristics are monitored before processing begins.

Cooking

Cooking follows validated time and temperature parameters as HACCP critical control points, ensuring food safety.

Manual peeling preserves structural integrity and sensory properties, monitored under HACCP and FSSC 22000 v6 standards.

IQF freezing

Products are individually quick frozen using high-technology equipment. Micro-crystal formation preserves cellular structure and physicochemical properties — controlled as a HACCP PCC.

Storage & export

Frozen products are stored in internationally regulated cold chambers with continuous temperature monitoring until final distribution.
